Easy Saturday Breakfast: Dutch Baby

Blueberry Dutch Baby

Do you enjoy pancakes, but don’t want to stand at the hot stove flipping flap jacks for half an hour? Well, baby, make a Dutch Baby. Have you got a blender, a #7 iron skillet and an oven? You do? Well, then you’re good to go!

Ingredients:

3 large eggs

1/2 cup all-purpose flour

1/2 cup milk

3 tablespoons white granulated sugar

1 teaspoon vanilla

Big pinch salt

2 tablespoons butter, melted

Optional add-in: fresh berries, your choice to drop in the skillet before placing in the oven

What to do:

Preheat your oven to 425° and place your iron skillet in it to heat up.

In a blender, add the first six ingredients and blend till smooth. When the oven has reached temperature, take it out of the oven. Pour the melted butter into the hot skillet and swirl it to coat the bottom. Be careful. Don’t burn yourself. Next pour the prepared batter in the buttered skillet and place it back into the hot oven. 

This morning I added a handful of fresh blueberries, sprinkled on top, before returning the skillet to the oven. If you have strawberries that would be good. Lemon zest is a great add-in, too.

Now, just let it bake until the sides puff up and the top is golden brown. Serve immediately. Top with a light syrup or a little powdered sugar or a dash or two of cinnamon sugar. This will serve about 3 to 4 people.
